  • powder – 250 g;
  • citric acid – 4.5 tsp. without slide;
  • gelatin – 1.5 tbsp. l.;
  • warm boiled water – 150 ml.

Cooking time: 40 minutes.

  4. Return to protein mass. Without stopping whipping, add melted gelatin in small parts. As soon as it finishes, beat for another 5 minutes.

Custard protein cream

Another option for preparing sweets for decoration. It’s just that the recipe is a little more labor-intensive, but as a result the cream will be more plastic and with a completely different taste.

Recipe Ingredients:

  • proteins – 3 pcs.;
  • powder – 250 g;
  • a pinch of salt;
  • half a packet of vanillin;
  • boiled water – 100 ml.

Cooking time: 45 minutes.

How to cook:

  1. Just like in other recipes, carefully separate the right part eggs;
  2. Add salt to the whites and beat until a strong, stable foam;

Don't be intimidated by looking at the ingredient list. Yes, this is one of the options for buttercream, but if you use quality chocolate and good butter, no one will even think that it is made with shortening.

For a bright and rich shade, use dark bitter chocolate, for a delicate light chocolate. Brown Milk will do.

  • softened butter – 100 g;
  • pre-melted warm chocolate – 100 g;
  • sifted powder – 150 g.

How to cook:

  1. Before you start preparing the decorative cream, it is worth noting that it is very important to observe the temperature regime of the chocolate. Too hot will melt the butter, and too cold will not mix with the rest of the ingredients - in both cases the cream will not work;
  2. Beat butter until fluffy;
  3. Pour in all the powder in one go, increase the speed to maximum and continue the process for at least 7 minutes;
  4. Chocolate can be poured into the butter mixture in small portions or immediately, but in a thin stream;
  5. Finish whipping only after the last ingredient is completely combined with the others, that is, there should not be a single light gap.

Vanilla

  1. Pour the whites into a dry and clean bowl (pay attention to this point);
  2. Mix water with powder in a saucepan and cook over moderate heat until the sweet ingredient dissolves;
  3. While the syrup is preparing, start beating the egg whites. Add acid and continue the process until stable peaks are obtained;
  4. Keeping the same speed, continue whipping and carefully pour in the syrup in a thin stream. Beating should continue until the mass cools completely. This process usually takes about 30 minutes;
  5. Once the protein mixture has cooled, add butter. At first it will settle, but as you beat it it will acquire a smooth structure. If you don’t succeed, put the container in the refrigerator for 10 minutes and resume the process;
  6. At the very end, add vanilla extract and stir.

Ganache

Ganache is a mixture of one type of chocolate (dark, white or milk) and heavy cream. Just like in the previous version, you can add various additives to improve the already delicious cream.

  • chocolate with 70% cocoa beans – 250 g;
  • honey – 50 g (or 40 g molasses);
  • 30% cream – 300 g.

Cooking time: 35 minutes.

  2. Chop the chocolate as finely as possible and pour hot cream over it. Stir until completely dissolved;

  1. The technological process begins with preparing the filling. Bring the cream to a boil. While they are heating, beat vanilla, eggs and sugar until light foam forms;
  2. Add starch and stir;
  3. Continuing stirring, pour in hot cream in a stream;
  4. Place the cream on the stove, add oil and cook until thick. Make sure that the mixture does not start to boil;
  5. Cool the finished cream to room temperature and put it in the refrigerator until sold;
  6. In a separate bowl, mix all the dry ingredients for the dough. Add pieces of chilled butter and puree using a blender (fork);
  7. Add eggs one at a time. After each pass, the mass must be thoroughly mixed;
  8. Pour in milk and stir in one direction until smooth;
  9. Pour the dough into molds and bake for a quarter of an hour at 180C;

  • 340 g dark chocolate;
  • 340 g white chocolate;
  • Orange food coloring;
  • Cling film;
  • Toothpick;
  • Parchment paper;
  • 24 cupcakes (this is how many you can decorate with this amount of chocolate).

When getting started, you need to make sure that you have a template for drawing a butterfly on hand.

Cover this template with cling film on top and start drawing.

But first you need to prepare the chocolate.

To do this, you need to melt the black (and, in parallel, white) chocolate in a water bath or in the microwave. Since you need to draw with both types of chocolate at once, it is important to make sure that both types are ready to work right away. Therefore, into melted chocolate white add dye and mix well. Then we pour the dark chocolate into a piping bag (you can see how to make a piping bag with your own hands here) and start drawing, following the contours of the design on the template.

Immediately, without letting the chocolate cool, draw the drawings orange and make streaks with a toothpick. The finished butterflies need to be positioned so that the wings are slightly bent. To do this, you can place plates on the sides.

Or simply, from the very beginning of work, draw a butterfly on the pages of a book previously covered with cling film.

In this position, the sweet figures should cool completely, well, and then they need to be separated from the cling film and decorated with cupcakes.

Cacti and succulents

Method 1

These cupcakes look very realistic, they look like real succulents in a flower pot. And if you want to create something similar, then you will need mastic.

Marshmallow mastic

To prepare it it is important to prepare:

  • 300 g white marshmallows;
  • 250g sifted powdered sugar;
  • Again 250 g of starch;
  • A couple of tablespoons of lemon juice.

From the very beginning of work, you need to ensure that the marshmallow mass increases in volume. To do this, heat it in a water bath or use a microwave, after adding lemon juice to the mixture.

After we have achieved the effect of increasing the mass, it needs to be combined with 100 g of powdered sugar, and also, at this stage, add dye if necessary.

And when this mass is well mixed, you can put it on the table to knead with the rest of the powdered sugar and starch. The finished mastic should be quite elastic and not stick to your hands.

Cupcake Decoration

From this mastic you can create the desired succulents. To do this, you need to make sure that the mastic is of two colors: mustard (brown) and green.

Once the necessary blanks are at hand, you can begin decorating.

First you need to roll out a rectangular layer of brown mastic. The dimensions here should be based on the size of the cupcake. You need to wrap the rolled out rectangle around the cupcake, creating a flower pot.

Sprinkle the top of the muffin (aka cupcake) with cookie crumbs. This will be the soil.

Advice. To ensure that the leaves are well connected to each other, lubricate them with a small amount of water.

The finished flowers should be placed in a silicone mold. Here they must be left so that they “grab”, and then each flower is pricked with a toothpick and inserted into the prepared cupcake with “soil” and a “flower pot.”

The same cacti can be made using butter cream.

To prepare it you will need:

  • Oil;
  • Powdered sugar. Everything is in equal parts.

Both ingredients are thoroughly whipped until a fluffy, strong mass is obtained. This is the simplest buttercream recipe, but it will be enough to create the desired decor.

In addition to buttercream, for creating succulents will come in handy:

  • Cupcakes;
  • Cookie;
  • Green mastic;
  • Green dye;
  • Brown dye or cocoa (optional);
  • Toothpicks;
  • Confectionery syringe (bag) with nozzles.

First you need to create a “flower pot” and “soil”. Here you can use the first decoration method.
